Back to School – Healthful Snacks for Kids! From the Colorado Wheat Administrative Committee and Wheat Foods Council

September 16, 2011, Fort Collins, Colo. – As August has ended and September has begun, why not change up the summer recipes for some fall recipes rich in whole grains? These recipes have to be conducive to all the soccer, football, ballet, or baseball practices and we must not forget the bouncing around in the backpack all day! To help combat all of these added energy needs we are providing you with a recipe for “Get Going Granola Bars” that will be perfect for your going back to school schedule and budget. These granola bars will be easy to pack for the kids to take when they rush out of the house in the morning and will give them that extra kick of healthy energy they need to have an amazing practice after school. Sara Olsen of the Colorado Wheat Administrative Committee reminds you that adding a carbohydrate snack, like these bars, gives a boost of energy to help the body run, think, move and jump! Try these granola bars to help keep your children going and keep in mind that you can change the fruit and spices in the recipe to suit anything your little ones desire!

Get Going Granola Bars

Ingredients:
2 c rolled oats
1/2 c brown sugar
1/2 c wheat germ
1 Tbsp ground cinnamon
1 c whole wheat flour
3/4 c raisins
3/4 tsp salt
1/2 c honey
2 tsp vanilla extract
1 c unsweetened applesauce
1 egg, beaten

Directions:
Preheat the oven to 350 degrees F. Generously grease a 9×13 inch baking pan. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, vanilla, applesauce and egg. Mix well using a large spoon. Pat the mixture evenly into the prepared pan. Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, and then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut. Makes 24 bars. 1 bar =1 serving

Most pre-packaged granola bars may cost as much as $2.00 – $5.00 for a box of eight.
